American BBQ, smoked low and slow

Third Wave BBQ is an Australian American-BBQ smokehouse. Beef brisket, beef ribs, pork ribs, pulled pork, lamb shoulder, chicken and wings are smoked low and slow and served with sides, or piled into burgers, loaded fries and share platters like the BBQ Platter of Doom. Gluten-free, vegetarian and vegan dishes are marked on the menu, there is a kids menu, and the menu is the same at every venue with new monthly specials.

All-you-can-eat BBQ Tuesdays and Thursday steak night

Every Tuesday from 5:30pm is All You Can Eat BBQ: BBQ Base Camp ($69), Carnivore Mode ($93) or BBQ Royalty ($119) a head. The whole table orders it, more meat comes out until you say stop, and a $59 bottomless drinks package is available at most venues. Thursdays from 5pm at Hawthorn East are Loaded Steak Night: a 300 g porterhouse with garlic butter, chunks of slow-smoked brisket, pepper sauce and unlimited crispy chips for $44. Sign up for a free meal on your birthday, valued at around $65, and earn Oinkwards points on every visit.

The original BBQ Thor's Hammer

Third Wave BBQ created the BBQ Thor's Hammer and coined the name: a whole beef shin, marinated for 24 hours, rubbed in spices and smoked for over 12 hours until it falls apart, served standing over smoky bacon mac and cheese with bear claws to shred it. It weighs over 3 kg, feeds four to five, and is on the menu at every venue, first come first served while it lasts each service. Prefer your beef dry-aged? The tomahawk and the dry-aged steak menu sit alongside it.

Every venue hosts birthdays, work dinners and Christmas parties, with set menus priced per head so groups can book without fuss. For events away from the restaurant, Third Wave caters slow-smoked American BBQ and burgers across Melbourne, delivered hot and ready to serve, including corporate and office catering, and its sister brands cover souvlaki (Skordo), Mexican (Cuate), kebabs (Meat Pit), toasties (Chubs Toasties) and bowls (Munch Bowl).
